A very easy recipe, sweet, nourishing, satisfying and relaxing.
500 grams of cooked chickpeas
1 large onion, chopped
The same amount of pumpkin chopped into cubes
1 bay leaf
Pinch of salt
Heat the oil in a pot.
Add the onion and a pinch of salt and saute well until it starts to get golden brown.
Add the pumpkin, another pinch of salt and continue to saute for a couple of minutes.
Add the chickpeas with the cooking liquid, use enough to cover the ingredients.
Add the bay leaf.
Bring to a boil. Cover and lower the flame.
Allow to simmer until the squash is soft.
If you have any grain cooked, like brown rice, you can add it to the stew.
You will get a nutritious dish very rich in protein and good quality carbohydrates.
