Chocolate and coconut oatmeal bars

If you like chocolate and coconut… Why not combine both in the same bar?… These chocolate and coconut bars combine the sweetness of the coconut with the bitterness of the cocoa to stimulate your palate with every bite!

Ingredients:

1,5 cups fine rolled oats

3 tbs chia seeds

2 tbs flax seeds

1/2 cup chopped almonds

A pinch of salt

1 cup  rice milk

3 tbs rice syrup

1/4 cup sunflower oil

2 tbs cocoa or carob powder

3 tbs shredded coconut

Preparation:

Preheat oven to 180ºC. Grease a baking pan.

Grind the flax seeds, you can use a suribachi or a hand blender.

In a large bowl, mix the dry ingredients: oats, almonds, chia and flax seeds and the salt.

In a small bowl, mix the wet ingredients: milk, rice syrup and oil.

Add the wet ingredients to the large bowl and mix well.

Now, divide the batter into two separate bowls and add the cocoa powder to one of them and the coconut to the other one.

Grease lightly a baking dish with some sunflower oil.

Place the cocoa mixture on the dish and then add  the coconut batter smoothly over it. Each layer should be about 1 cm high.

Bake in a preheated oven at 160 degrees for about 25 minutes.

To cut the bars wait until the dough is completely cold.
