Who said pizzas have to include cheese?
Try this version with spelt flour and lots of onion so that the dough is soft and juicy !!!
Ingredients for the dough:
250 gr. spelt flour
15 gr. yeast
1/2 cup warm water
2 spoonfulls of oil (if flavored with some spices much better)
salt
Ingredients for the topping:
2 onions
Black salted dry olives (you can find in Moroccan shops)
oregano
fresh basil
Crumbled cod (optional)
Preparation:
To make the dough, mix in a bowl the flour, the baking powder and a pinch of salt. Gently add water, mixing well until the dough does not stick to your fingers.
Let stand covered with a cloth for 2-3 hours.
Then add the oil kneading the dough again and let it sit while preparing the topping.
For the topping, saute the onion with a pinch of salt in a pan with oil over medium-high heat for about 5 minutes.
Lower the heat and let continue cooking until golden brown and tender.
Add the pitted olives and the crumbled cod (optional).
Add dried oregano and fresh chopped basil and leave a couple of minutes longer.
Pre-heat the oven to 220 degrees.
Spread the pizza dough on a floured baking tray.
Place the topping over the dough covering completely.
Bake in hot oven for about 10 minutes.
Serve with a green salad and enjoy it!
