“Jablecny sen” or Apple dream is the name of this delicious apple pie with seeds and coconut base.
I tried it in a Lebanese restaurant in Prague…. The name of it was so attractive that I ordered it and yes…. I decided to make it at home …. It was worth it … Go ahead!
Ingredients for the base:
For a cake for 4 persons:
1 big cup of sunflower seeds
The same amount of grated coconut
1/3 cup of rice syrup
Ingredients for the topping:
4 apples
4 to 6 dates
If you do not want to use dates you can use raisins or dried apricots
A pinch of salt
Preparation:
Grind the seeds with the coconut in a food processor.
Add the syrup, mix well and place the dough in a mold, pressing well to compact the dough.
Keep it in the fridge.
In the meantime, prepare the topping.
Peel and chop the apples to make a compote.
Add chopped dried fruit, a pinch of salt and mix well.
Put a tiny bit of water to prevent sticking, a couple spoonfulls should be enough.
Bring to boil. When you see it starts to boiling, lower the flame, place the lid and leave it to cook, stirring occasionally, until apples are well soft.
If you see that they have released a lot of water, remove the lid and let the liquid evaporate.
Place the apple compot in a bowl to cool down.
Taste the sweetness, if you think it needs more, you can add some more rice syrup or some dried fruit now that is still hot.
When cool, stir it well, especially if you have added some dried fruit at the end.
Place the compote in the mold, over the base and put it back in the fridge.
When it is cold, it will be ready to unmold.
Add some chopped almonds on top to decorate and
there you are, a very delicious and filling apple pie…
