Cold melon soup

Cold melon soup is ideal for summer, very refreshing, you can have it as a starter or between meals. Its sweet flavor will help you relax after a day of intense sun.

Ingredients:

Equal amounts of onion and melon

1 spoonful of rice miso

Salt

Sesame or olive oil

Preparation:

Cook the onions with a pinch of salt in a little sesame or olive oil to caramelize.

Add the melon cut into small pieces and fry lightly with a pinch of salt.

Lower the flame, cover the pan with a lid and let it cook over a low fire.

Melon will start loosing all its water. So, you don’t  usually need to add more.

Allow the soup to cook for 20 minutes.

Add the miso diluted in a little bit of the liquid from the soup.

Now, use an inmersion blender to puree the soup.

Let it cool completely and serve with a leave of mint.
