Today, to my surprise I found bunches of nettles on sale, and there was also fresh garlic…
With that in my basket and a good handful of almonds, I have prepared a simple, delicious nettle soup…
As you know nettle has many benefits, especially in spring: it helps to purify the blood, is diuretic, it contains mucilages and has antihistaminic properties. It is also rich in calcium and magnesium, helping to strengthen your bones.
Ingredients:
1 good handful of nettles (about 100 grams)
3 fresh garlics (depending on the size)
1/4 strip of wakame
1 handful of unpeeled almonds per person
1 litre of water
Extra virgin olive oil
Salt
Elaboration:
Wash and cut the nettles.
Chop the fresh garlic too.
Put the almonds to soak. If you have them soaked from the night before, much better.
Heat a pot and add 2 tbsp. of olive oil.
Sauté the fresh garlics 2 or 3 minutes, stirring continuously so they do not burn. Add the nettles and skip another minute.
Add the water, a pinch of salt and bring to a boil.
When it starts to boil, lower the flame and cook on low heat, with lid for 5 minutes.
Add the almonds and leave another 3 minutes.
Turn off, and let it sit for a couple of minutes before serving.
