Almond cookies

Almonds are one of the most interesting nuts. They are rich in protein and calcium. A good source of complex carbs and rich in healthy fatty acids.

What else can you ask for?


1,5 cups of ground almonds

½ cup of brown flour

1 teaspoon baking powder

¼ teaspoon salt

1 teaspoon almond extract

1 soy yogurt.

Rice syrup (optional)


Mix the ground almonds with the flour, yeast and salt.

Add the extract and yogurt and stir.

The dough will be a bit sticky, so it is best not to put your hands on it!

Using two spoons, place small heaps on a greased baking tray.

Preheat oven to 160 degrees and put the cookies for about 25 minutes.

When ready, if you want them sweeter, varnish over with a little rice syrup.

Do it while they are hot and it will spread easily.
