Vegan pizza with red lentils and fresh unbaked vegetables

An original, easy, fast and delicious pizza … and also … gluten free.

Ingredients for the base:

1 large glass of red lentils

Water

Coriander or parsley (optional)

Salt

Ingredients for coverage:

Seasonal organic tomatoes

Arugula

Avocado

Ingredients for dressing:

1 c.s. of olive oil

a pinch of pepper

1 c.s. of rice vinegar

2 c.s. of apple concentrate

1 c.s. of white miso.

Elaboration:

Leave the lentils to soak overnight.

If you don’t remember, just soak them for 1 hour in hot water.

Drain the lentils and reserve part of the liquid.

Crush the lentils with a little of the liquid, do not use much, just enough to allow you to crush them with a blender. Beat to form a thick textured dough.

The density should be thicker than to make crepes.

Add a pinch of salt and if you like, add a good handful of coriander or chopped parsley.

I like to add it like this, without crushing, but if you want you can crush it at the same time, in that case the pizza base will be a more greenish color.

Heat a flat pan with a little extra virgin olive oil.

Add a good saucepan of the dough, depending on the diameter of the pan you may need to add another saucepan.

Use a wet spatula to spread the dough well and cover the entire pan.

Lower the heat and let it go on medium heat.

While you can start cutting the vegetables you are going to place on top.

I have used a locally grown organic tomato sliced, a good handful of arugula and 1/2 avocado cut into strips.

When you see that the base of the pizza begins to peel off the pan by the edges and that it begins to dry, it is time to turn it around.

Use a flat and wide spatula. You can also flip it with the help of a plate, as if making an omelet.

Leave a couple of minutes on the fire while finishing the other side.

Prepare the dressing by mixing all the ingredients in a glass jar with a lid and beating well.

Place the pizza base on a plate, add the vegetables and sprinkle with the dressing.

If you like very tasty, you can spread the base with part of the dressing and then place the vegetables on top.

Serve while the base is still warm.
