Apple strudel with dry apricot cream

Today I bring you a recipe that I used in the last intensive «In home». (Private and fully customized cooking classes that I teach in the house of the person interested).

When I prepare recipes for courses of this type, I need to choose ingredients that are seasonal and prepare different recipes for each day.

The last intensive was 9 days, so I selected a total of 18 dessert recipes made with seasonal fruits as a base: apples and pears.

As I was running out of ideas … I had a look at some of the recipes in the book “Sweets without guilt for the whole family” by Jorge Limón, director of the Macrobiotic Institute of Seville … Et voilà! … I found a delicious, original and very simple recipe by Agnès Perez, director of the school for macrobiotics Ca l’Agnès in Cubelles.

Ingredients:

4 apples, calculate 1 per person

6 to 8 dried apricots

a pinch of salt

Some vegetable drink

Cinnamon optional

Seasonal fruit to decorate

Elaboration

Cut the apples into thin slices of half a centimeter.

Place baking paper on a baking sheet and arrange the apple slices on top with a tiny pinch of salt. If you like really sweet desserts, you can add a little rice syrup on top. In our preparation I didn’t use it because the dried apricots already provides a lot of sweetness. Bake at 180 degrees until apples are done and the ends begin to brown.

While baking, cook the apricots in a saucepan with enough vegetable drink to cover them and a pinch of salt. Cook for about 10 minutes until they are very soft enough to blend.

Blend until you get a soft cream, if necessary add a little more vegetable drink. It should be creamy but not excessively liquidish.

Arrange the dish by placing a slice of apple and a little cream of dried apricots on top, another slice and another of dried apricots and so on until you have your 4 strudels.

When you place the last slice of apple you can fold it gently and place one or two fruits of the forest to maintain the fold and to simulate a flower.
