2 sticks of cinnamon

Concentrated apple juice

Cinnamon and cocoa powder

Membrillos al horno

Preparation:

Thoroughly wash the quinces to remove the layer of fluff that covers them.

You can also peel them but I like to keep the skin.

Cut them into quarters and remove the heart.

Place in a baking dish with a lid.

Add a pinch of salt and mix well.

Add a cup of water at the base. Quinces are quite dry and will not release much juice as apples do.

Place the dry apricots and the cinnamon sticks.

Add a generous amount of concentrated apple juice over the quinces.

Cover with the lid and place in the oven at 250 degrees.

Bake for at least 40 minutes or until tender.

Serve with a little bit of the juice over and sprinkled with a dash of cinnamon and cocoa powder.
