Tofu, shiitake and fresh garlic scramble

Fancy a scramble?

Try this stir-fry of tofu, shiitake, and fresh garlic and you won’t miss the tradicional one!

A trio of ingredients to harmonize your energy in spring.

Ingredients:

1/2 block of tofu

1/2 block of smoked tofu (optional)

6 dried shiitake

2 fresh garlic

a pinch of salt

Extra virgin olive oil

Preparation:

Wash shiitake mushrooms well and soak in a bowl of water. Let them hydrate, they will need at least 30 minutes, if you can leave them a bit longer, even better.

If you want to reduce the time of soaking, you can buy the already laminated mushrooms, they will hydrate much sooner; or you can also choose fresh shiitakes, the recipe will be very tasty too,  but not as aromatic as with the dry ones.

You can vary the type of tofu you use in this recipe. If you want it to be more tasty, use more smoked tofu, if you like it lighter use a whole block of natural tofu.

In any case, it is advisable to cook the tofu in boiling water for about 5 minutes.

Once cooked, crumble it with your hands in a salad bowl.

Then, cut the shiitakes in thin slices and chop the fresh garlic.

In a wide skillet or wok, begin to sauté the shiitakes with a pinch of salt and a little olive oil.

When they start to shine, add the fresh garlic and skip for a couple more minutes. Stir constantly so they do not burn.

Add the tofu, a pinch of salt and continue stirring for five minutes over medium heat.

Turn off and serve immediately with some greens.
