Lentils are one of the best sources of vegetable protein that you can choose, but we often get tired of eating them stewed.
If you haven’t tried them as a spread, I encourage you to do so. They taste great, especially if the original stew was tasty.
To prepare the spread, basically use any leftover lentils and blend them with some nuts of your choice. You can use any kind of nuts which grow in your climate. I’ve used cashews this time, but with almonds, is just as delicious.
Ingredients:
1 cup cooked lentils
1/4 cup cashews, almonds or walnuts (previously soaked)
Black pepper to taste
Umeboshi vinegar (optional)
Preparation:
To cook the lentils use plenty of vegetables, specially sweet ones, carrots, sweet potatoes and plenty of coriander will make a great stew. And the combination with nuts will be just great!
It is interesting to use the nuts soaked previously, this will help digest them better, the spread will be creamier and you will reduce the anti nutrients the nuts contain.
So if you can, leave them to soak overnight in warm water with a squeeze of lemon juice and drain well before blending.
To make the spread, simply blend all ingredients with the blender and serve with plenty of chopped chives.
If you want to enhance the flavour a bit, you can add a few drops of umeboshi vinegar, i like it this way!
You can keep the spread in the fridge for several days and enjoy it for a snack or as part of your lunch or dinner.
