Courgette plants are in full bloom. If you have any at home, you will surely be looking for recipes to use it in your meals … This month, I’ll be writing some recipes for you, to enjoy them in differente ways!
Ingredients:
4 small or 2 large courgettes
1 large onion, finely chopped
1 clove garlic
200 grams of flat mushrooms
1 big handful of roughly crushed peanuts or almonds
1 handful of raisins
Bread crumbs (optional)
Preparation:
Switch the oven on. Empty the zucchini with the help of a spoon and place them on an oiled baking dish. Sprinkle with a bit of salt and cook while you prepare the other ingredients.
Heat up a bit of olive oil in a pan, add the onion and the garlic (without the center) and a pinch of salt.
Chop the pulp of the courgette very finely and add it to the pan.
Chop the mushrooms and add them to the other vegetables.
When the vegetables are tender add the peanuts or almonds together with the raisins, stir well and let the cook for a couple more minutes to hydrate the raisins. Check if they need a bit more salt, you can also use some shoyu for extra flavour.
Turn off.
Fill the courgettes with the minced vegetables and sprinkle with some breadcrumbs.
Place them back in the oven and cook at 200 degrees until they are tender and golden brown on top.
