This quinoa paella is prepared in just 30 minutes, with dates to give sweetness and almonds for a crunchy texture…. the result is simply…. delicious ….
Ingredients:
1 cup of quinoa
2 cups of water
1 tsp turmeric
1 small handful of arame seaweed soaked
3 fresh garlic
2 carrots
1/2 red bell pepper
4 dates
12 almonds
2 spoonfuls shoyu.
2 spoonfuls of concentrated apple juice
Preparation:
Wash the quinoa and bring to boil.
Remove the surface scum if any, and add a pinch of salt and turmeric.
Lower the heat and let it cook over low heat for about 20 minutes or until ready.
Meanwhile, chop the vegetables into small cubes.
Chop the dates to the same size and cut the almonds roughly.
In a wok with a little olive oil, sauté the fresh garlic and the pepper with a pinch of salt, then add the carrots and the dates and continue to saut,e for a few minutes.
Now add the almonds, the arame seaweed well drained, 2 spoonfuls of shoyu, and 2 of concentrated apple juice.
Finally add the quinoa and mix all the ingredients.
Cook it with love… and enjoy!
How long do you cook the arame?
No need to cook it,… you only have to soak it in water for about 10 minutes, while you prepare the rest of the recipe and add it at the end.
Anyhow ,since you add it with the condiments a couple of minutes to mix well the flavours is recommended. 🙂
