Like the ones you had when you were a kid …. but much healthier!
These tofu balls in carrot sauce will leave you satisfied without feeling guilty if you have a second serving !!
Ingredients:
1/2 block of smoked tofu
1/2 block of tofu
1 clove garlic (inner part removed)
1 bunch of parsley
2 – 3 tbsp of breadcrumbs
1 tsp white miso
1/2 small cup of water
Salt
Sauce:
1 large onion
2 carrots
1 tbsp white miso
1,5 – 2 large cups water
Fresh herbs (optional)
Salt
Preparation:
Crumble the tofu with your hands over a large bowl.
Pound the parsley, garlic and a pinch of salt in a mortar. Add it to the tofu.
Dissolve the miso with hot water and add it to the tofu.
Add some breadcrumbs, you will not need much, 1 – 2 tbsp will be enough to help bind the dough.
Mix the dough with your hands and let it sit.
Meanwhile, chop the onion and carrots into very fine cubes.
Heat a little oil in a saucepan and add the onion with a pinch of salt, cook until golden brown, add the carrots and a pinch of salt and cook 5 more minutes.
Add the water to the stew. Cover, bring to a boil, lower the flame and let it cook for another 10 minutes.
Dissolve the miso and add it to the stew in the last minute.
Blend until you get a thick sauce, if you want it lighter you can add some more water. Just taste to see if you need to add a bit more miso.
You can add some fresh herbs too, fresh basil is delicious with this sauce.
It is time to form and fry the tofu balls.
With wet hands get small amounts of tofu and form balls.
Heat up some oil and fry the tofu balls without stirring them. Do not put many at the same time, so that you can keep the oil temperature and they come out crisp.
You will notice that they are ready when the edges become golden brown. Turn them over with the help of two forks and wait a bit for the other side to get done.
Take them out with a slotted spoon onto absorbent paper.
Add the balls to the sauce and let it all cook together for a couple of minutes before serving.
If you prefer to enjoy the crunchy texture of the balls, you can serve them directly on the plate and add some sauce over it or just leave it on the side in a bowl as a dip!
