All you need is to have your brown rice cooked, since it takes longer than the refined…
… And then, use savoury ingredients to provide plenty of flavour and colour to the dish

Ingredients:
3 cups of cooked brown rice
2 cloves of garlic minced
3 strips of celery
1/2 red pepper
1 courgette
3 pieces of dried tomato rehydrated (optional)
1 to 2 tsp of turmeric
A pinch of black pepper
1 cm grated ginger (optional)
Sea salt
Extra virgin olive oil
Preparation:
Chop celery, red pepper and zucchini into small cubes.
Mince the dried tomato once rehydrated.
Grate the ginger with a fine grater.
Start sautéing in a large frying pan the pepper and the celery, adding a pinch of salt.
When they start to get golden brown add the ginger and the garlic and sauté a couple more minutes, mixing well.
Add the zucchini and sauté with a pinch of salt, until tender but al dente.
Add the dried tomatoes, turmeric, black pepper and a splash of water to cover the base of the pan.
Continue cooking until the water has almost evaporated, then add the rice, lower the flame and mix well with other ingredients.
Place some lemon slices on top and let it sit a few minutes before serving.
