Spring rice with mint

Deliciously refreshing and tasty spring rice… with spring onions and mint…

To enjoy cold or hot …

Ingredients:

1 onion

1 clove of garlic

1 cup of cooked rice

2 spoonfuls of rice miso

A little water to dissolve the miso

  8 mint leaves (I used the Mentha spicata type)

¼ red pepper

2 spring onions (use the green part)

Preparation:

Chop the onion, garlic and pepper very finely.

Sauté the onion and garlic with a pinch of salt, in a pan with a little olive oil, for about 4 minutes.

Add the red pepper and sauté 4 minutes more.

Dilute the miso with a bit of water.

Add the rice  to the vegetables and mix well.

Add the diluted miso, mix.

Add the green part of the spring onion, finely chopped.

Leave a couple of minutes and turn the heat off.

Add the chopped mint and mix well.

Serve with the help of a mold and garnish with some mint leaves.
