Fancy a refreshing and colorful starter? … Try these cucumber rolls with avocado … super simple, super tasty… and fun!
1/2 spring onion
1 handful of watercress or lamb’s lettuce
Toasted sesame seeds
1-2 tbsp. of umeboshi vinegar
Cut the onion into thin strips, add a pinch of salt and knead gently. Reserve.
Cut the cucumber into longitudinal strips with the help of a mandolin. Reserve.
Chop the avocado into cubes.
Rinse the onion with water and drain well. Mix with the avocado in a bowl.
Add the umeboshi vinegar and mix well.
Place a strip of cucumber on a flat surface, place another strip over superimposing on the first half. Roll into a cylinder, leaving enough space inside for the filling, and place on a serving platter.
Insert a sprig of lamb’s lettuce inside the cylinder and fill it with the avocado mixture.
Do the same with the rest of cucumber strips until you finish the filling. You will get about 6 rolls.
Add some toasted sesame seeds on top of each roll and serve.
