A complete and nutritious dish, to enjoy in the last days of summer.
With a mouth watering dressing, and full of veggies, you will feel really satisfied and nourished!
2 cups of cooked red beans
4 spoonfulls of organic sweet corn
2 stalks of grated celery
4 sliced radish
1/2 avocado in cubes
2 handfuls of arugula
1 spoonfull of extra virgin olive oil
1/2 to 1 teaspoon of mustard
1 spoonfull of apple concentrate
1/2 to 1 spoonfull of rice miso
1 spoonfull of rice vinegar
Arrange the beans in a large bowl along with the arugula.
Add the corn and the grated celery stalks.
Incorporate the radishes cut into slices and the avocado into cubes.
Place the dressing ingredients in a glass jar.
Shake the jar to mix well.
Add the dressing to the salad and mix all the ingredients carefully.
