If you like Mexican food … you’ll love these beans.
A rich and nourishing stew with a slight spicy touch… that will make you feel deliciously good.
You can cook the beans at home as usual, or use a jar of good quality already cooked beans to make an extra quick dish.
Combine it with some brown rice and steamed vegetables for a perfect meal !
Ingredients:
1 jar of cooked organic beans about 660 gr.
or the same amount of red beans cooked at home the usual way
1 chopped onion
1 carrot cut into small squares
1 green pepper cut into small squares
1 piece of pumpkin, if you have some at home, use the same amount as carrot
2 cloves of garlic
1/2 a jar of corn
Black pepper to taste
Oregano to taste
1 small cayenne (Birdseye type)
2 spoonfuls of mirim
1 spoonful of shoyu
Preparation:
Saute the onion, minced garlic and green pepper in a little olive oil with a pinch of salt.
Add the carrot and fry until lightly brown.
If you have pumpkin, add it now and saute a few more minutes.
Add the beans, corn, the black pepper and oregano to taste.
Let it all cook together over a low heat for about 10 minutes.
Add mirim and shoyu to taste and let a couple minutes more.
