Soon, children will be on holidays…
how about preparing Vegan Christmas Cookies with them?
A good activity for the Christmas Eve!!
Ingredients:
1 cup and 1/4 of semi brown flour
1/4 cup sesame oil
1/4 cup concentrated apple juice
water
1 handful of soaked raisins
Sesame or poppy seeds
1 tea spoon of ginger juice (optional)
A pinch of salt
Preparation:
Mix salt and flour with the oil and concentrate apple juice.
You will notice that the dough is loose and doesn’t stick together. Do not worry, it’s time to add water.
Start adding water slowly until you feel the dough begins to come together. You will notice also that it sticks to your hands … good sign !!
You can add a little more flour now and see that the dough does no longer sticks to your hands.
Knead gently and divide it into two.
Add the raisins well drained to one part and knead gently again.
Add the seeds and a the ginger juice to the other half. You may need to add a bit more flour here… since the juice may make the dough sticky again.
Extends the dough with a roller. Do not make it very thin, so that it doesn’t dry too much when baking.
Use the molds to shape the cookies and place them on a greased oven tray.
Do the same with the other half of the dough.
Place the tray in a hot oven at a temperature of 200 degrees.
Uses the upper and lower heat position. In about 10 minutes they will be ready.
Remove them from the oven and place them on a plate with a napkin to cool.
You can store them in a tin for days.
Try to vary the seeds… or add chopped dried apricots or dates instead of raisins…. add cinnamon if you like … make your own creations … and enjoy the experience !!
